Tommy's Margarita

Julio Bermejo's 1990 version from Tommy's in San Francisco drops the orange liqueur for agave syrup. The tequila shows through more clearly: cleaner, rounder, and easy to batch.

1. Add to a shaker

   50 ml100 ml150 ml200 ml	Tequila blanco— not in stock
   25 ml50 ml75 ml100 ml	Lime juice (fresh)— not in stock
   15 ml30 ml45 ml60 ml	Agave syrup— not in stock

2. Shake hard with cubed ice for 10 seconds

3. Strain into an old-fashioned glass filled with cubed ice

4. Garnish with lime wedge
