Pisco Sour

Peru's national cocktail, created by Victor Morris in Lima in the 1920s. Grape brandy, lime and sugar under an egg-white foam dotted with bitters: floral, tart and soft.

  1. Add to a shaker

    25 ml50 ml75 ml100 mlLime juice (fresh)— not in stock
    20 ml40 ml60 ml80 mlSugar syrup (2:1)— not in stock
    15 ml30 ml45 ml60 mlEgg white— not in stock
  2. Dry shake without ice for 10 seconds, then shake hard with cubed ice for 10 more

  3. Fine strain into a chilled coupe, no ice

  4. Dot the foam with

  5. Garnish with bitters drops on foam
