Sam Ross, Milk & Honey, 2005 — the most copied cocktail of its generation. A Scotch sour with honey and ginger, topped with a float of smoky Islay malt: warming, spicy and medicinal in the best way.

1. Add to a shaker

   50 ml100 ml150 ml200 ml	Blended Scotch— not in stock
   20 ml40 ml60 ml80 ml	Lemon juice (fresh)— not in stock
   20 ml40 ml60 ml80 ml	Honey-ginger syrup— not in stock

2. Shake hard with cubed ice for 10 seconds

3. Strain into an old-fashioned glass over one large ice cube

4. Float on top over the back of a spoon

   7.5 ml2 × 7.5 ml3 × 7.5 ml4 × 7.5 ml

   Islay single malt— not in stock

5. Garnish with candied ginger
