Daiquiri

Cuba, 1890s, named after the beach near Santiago where American mining engineers mixed local rum with lime and sugar. Three ingredients and no hiding place: bright, tart, clean — the test of a bartender.

  1. Add to a shaker

    60 ml120 ml180 ml240 mlWhite rum— not in stock
    25 ml50 ml75 ml100 mlLime juice (fresh)— not in stock
    15 ml30 ml45 ml60 mlSugar syrup (2:1)— not in stock
  2. Shake hard with cubed ice for 10–12 seconds

  3. Fine strain into a chilled coupe, no ice

  4. Garnish with lime wedge
